Welcome to The Entertaining Menu, a new post series that I am putting together that marries some delicious food into a perfect feast fit for any occasion. It also includes recipes! Entertaining can be difficult when your guests all have different dietary requirements, and in this health conscious world it can be hard to find the right balance of greens, good fats and tasty morsels.
I know it was awhile ago, but for Easter this year we managed to put together a healthy and vegan friendly smorgasbord that would be perfect for any occasion! Check out our menu for our event here and try the recipes out for yourself:
Entree:
Entree was a delicious vegan cheese fondue that we put together out of blended cashews, nutritional yeast, rosemary, garlic, and some other ingredients that are easy to purchase from your local store. It was served with sourdough and rustic bread, and put together into two small dipping bowls to make it easier to share and easier to eat. The good thing with this recipe is that you don’t need to make much to make a delicious entree that your guests won’t ever forget, and the fats from the nuts make it a much healthier alternative to a cheese platter.

Main:
Now if that entree was a little heavy for you then you will be absolutely thrilled with what we have as the main course! Not only is this main light, healthy and packed with amazing greens, it’s also completely raw and takes hardly any time to prepare.
For our main course we made Pesto Pasta with Zucchini Noodles from the recipe book Raw. Vegan. Not Gross by Laura Miller. Laura’s recipes are absolutely delightful and making this pesto pasta was easy to prepare before the event. Unfortunately I don’t have the recipe available for print, but if you would like to get your hands on Laura Miller’s books you can do so here, or you can use a similar pesto recipe like this one from Youtube without the cheese.
Dessert:
Since it was Easter when we had this event it wouldn’t be a celebration without a serving of Hot Cross Buns (or in my case, hot cross bunnies because I try and make all mine in a bunny shape) and these little beauties rounded up a day of culinary delights super well that I think you should eat them anytime! They did take awhile to prepare – as most hot cross bun recipes do – so this might be a great treat to start the preparation of before your guests arrive, and then maybe get them to help out with the fun bits like crossing the buns, glazing them, and eating them.
We got our recipe for hot cross buns from The Lazy Kitchen and they were such a sweet, fruit filled treat that we ate them in one go. With enough time between courses, and many games played, it was a treat that was well-deserved!
